Sauvignon Blanc is a white Varietal from the Bordeaux region of France and depending upon your point of view, is either one of the great white wines of the world or is something to be avoided at all costs. Wine enthusiasts rarely fall between. Earliest references to Sauvignon Blanc only date from the 1700s although its origins could conceivably go back as far as 600 years based on DNA testing. Sauvignon Blanc's arrival in the US is quite recent with the earliest known plantings in Napa Valley in the 1960s. It has since gone on to become California's third most planted white Varietal.
Sauvignon Blanc produces a dry, crisp wine with varying characteristics. It's often described as grassy or vegetative if less ripened fruit are used. Fully ripened fruit can mellow the strong characteristics and give it a sweeter flavor as balance. It generally carries a high acid level making it one of the more food friendly white Varietals. Even when ripe, the fruit retains its green skin leading those not "in the know" to believe that the fruit doesn't ripen. Sauvignon Blanc buds later than most grapes and ripens early, which is ideal for regions with shorter growing seasons. In longer growing seasons, the fruit over ripens destroying any chance of creating a balanced wine.
Sauvignon Musque is some times confused as a unique Varietal but it is actually a clone of Sauvignon Blanc. In California, it's also known at some wineries as Fume Blanc, a name coined by Robert Mondavi when he wished to dissociate the Varietal from the previous batches of poorly thought of Sauvignon Blancs. In recent years, New Zealand Sauvignon Blancs have almost universally been acclaimed as the best in the world, quite an accomplishment considering just twenty years ago, New Zealand was virtually unknown as a wine producer.
Sauvignon Blanc should be served just above refrigerator temperature to allow some of the complexity to emerge. Very few modern Sauvignon Blancs are meant to age more than 3 years.
